Ingredients

225g courgettes (grated)
1 medium onion
2 tablespoons vegetable oil
175g plain flour
2 eggs (beaten)
225g Feta cheese (or any cheese, try Edam or Mozzarella)
Salt and pepper to taste


Preparation

Combine all ingredients, except oil, in a bowl. Season to taste.
Heat the oil over a medium heat in a frying pan.
Drop a heaped tablespoon of the mixture into the frying pan and cook for a few minutes on each side until golden brown.
